Plone provides all the tools you need. You can categorize content hierarchically using folders & subfolders, you can have a flat structure using tags, you can use external components to manage more complex taxonomies, or you could even combine all the above. The virtualization platform doesn't really matter, as long as it provides you with a reliable virtual machine with enough RAM (I would recommend 2GB or more) in order to run Plone in production. We've been hosting Plone & Plumi sites using both Xen & KVM. Each technology has its advantages & disadvantages but that's another discussion, not really relevant with Plone/Plumi requirements.
