If your end goal is to have a bunch of laptop LCDs on HDMI, you could just
get driver boards with the HDMI built in, something like this:

I've also heard that iPad replacement retina displays are just displayport
screens. This would give a super high resolution, but I don't think there
are any off the shelf breakout boards available.

Maybe that doesn't quite meet your needs, but it is another option to look
at.
