I've also heard that iPad replacement retina displays are just displayport screens. This would give a super high resolution, but I don't think there are any off the shelf breakout boards available. http://hackaday.com/2013/04/22/connect-a-retina-display-to-a-regular-computer/ Maybe that doesn't quite meet your needs, but it is another option to look at.
