It should be as easy as finding the directory/folder that iTunes uses and copying it over to the USB drive. If you look in the iTunes settings it will tell you which directory it's using for music. Then connect the external drive to your computer and use your standard operating system tools (eg, Windows Explorer on Windows) to copy the folder from one drive to the other.
