I've answer in the iPeng service thread. The general answer is: it's all lossless up to the AppleTV where the re-sampling happens. Actually as of my experience I don't think the re sampling algorithm in the AppleTV is bad. I haven't tested it in detail but it's running iOS and I know under iOS nobody ever complained in the past (until last summer) when iPeng still made iOS downsample all streams to 44.1/16 and then would make it upsample back to 48/24, not even our audiophile friends here noticed it back then :)
