I really want such interfaces to be done with USB, there are hundreds of
USB relay boxes etc. already out on the market. I'm sure one of them
will work well with your application. Since the board will already have
USB jacks, each application of a specialty control interface can just
plug into a USB jack rather than require an ever exapnding set of
dedicated interfaces on the box itself. It makes it much easier to
implement new interfaces as they are required, no change in the core
hardware needs to be done. 

I'm not trying to be rude here, but I think the solution for control
interfaces can be implemented much easier with external USB hardware.
