There are three reasons in my mind:
1. For users who want a cheap high-end solution. If the DAC John has
been designing sounds as good as he believed it would it's going to be
considerably better than any cheap external USB DAC.
2. For users who want something that looks nice and can be accepted by
other family members who doesn't like an ugly DIY box with cables and
other stuff all over the place.
3. For users who never would consider a DIY solution that involved
running Linux commands, writing SD card images to SD cards, manually
assembling the device or purchasing the different parts from different
places.
However, you are correct that Squeeze on Arch are very useful without
any extra hardware, it already fulfils point 1 to some level and with a
nice looking box it can easily also fulfil point 2.
Point 3 is going to be more challenging unless someone is willing to
assemble the already existing hardware components and sell them as a
pre-installed box, but this requires a separate Squeeze on Arch license
since the current Squeeze on Arch license is restricted to non
commercial usage.
