I would say one Pi3 is more than capable of doing more than one job at a
time. LMS is not demanding, even with lame mp3 encoding.

I have a Pi3 that's more than capable of running full speed arcade
machine emulation at the same time as "motion" security camera type
stuff at the same time as running a weather station data gathering
program at the same time as running a software music player app.. the
only thing that stresses the CPU is the emulation, which can actually
only use two of the four cores anyway.
