The remote access has had some work done it yesterday.
This is on a rpi4b
So, do a

sudo apt update && sudo apt full-upgrade -y; sudo reboot

in the web gui go to here

and select the required resolution. Reboot
It will then be possible (fair wind ,and all that :)) to connect to the
headless rpi without any cable in the HDMI outputs.

It's pretty similar for the new piZero2W, but that needs a line
alteration in the /boot/config.txt
