I quite like http://damnsmalllinux.org/ and have used it in several embedded applications.
I think SlimCD is either a branch off of it, or off of Knoppix directly, so many of the components may be directly re-usable once you have the OS going. You may want to consider CF on an CF to IDE adapter for the boot drive instead.
