Have you tried a "wipe & scan"?
I've found that occasionally the scan function encounters ambiguous
errors that lead to behavior as you describe.

Shut down the process tree for Slim.exe.

Delete Root\Documents and Settings\<user>\Local
Settings\Temp\pdk-<user>

Delete any Root\WINDOWS\TEMP\\pdk-SYSTEM folders

Delete Root\Program Files\SlimServer\server\Cache

Restart Slimserver.
This will initiate a complete new scan on your music folder.
Seems to work for me.
