Adding to Jacob's iTunes preference advice:
command+9 will take you to the Advanced menu
where you can uncheck the "copy files to iTunes Music folder
when adding to library" option

command+5 gives the importing preference panel 
(default is aac and 128 kbps - other formats can be aiff,
apple lossless, mp3, or wav)

command+6 gives burning preferences panel (audio cd,
mp3 cd, or data cd/dvd)

most commonly set preference panels -- 
that can also be found with the command-bracket
tab moving commands
