I can import MP3s as AAC without having the music copied to the
iTunes library? Could I then get rid of the mp3s?

There is. Under preferences, in the general section of import. While
you can't access the actual tabs, command+[ and command+] will allow
you to switch from one tab to another and you will be able to find
it. The option is called "copy music when adding it to library" or
something similar. Uncheck that box and that'll take care of it.
