There aren't other browsers that work with VoiceOver that Google would
support any more than Safari. However, apparently Google Apps support
should be better with development versions of Safari. Try the Safari 3
Beta, perhaps with a recent WebKit build.
Having said that, I don't hold up much hope that Google Apps will be
coded in an accessible fashion. And I suspect that even if it were,
Safari's WebKit rendering engine lacks the features such an accessible
spreadsheet would require.
HTML has no native spreadsheet-type widgets, and the only existing
toolset for making custom widgets hacked out of HTML and JavaScript
accessible is ARIA:

But WebKit zero ARIA support:

You can of course put pressure on Apple to implement ARIA support at the
usual address ([EMAIL PROTECTED]).
I suspect the next version of HTML will include some sort of native
spreadsheet widget. Apple is actively involved in its specification, but
it will be probably be years before we see the specification finished or
its widespread use.
