One improvement in the latest release is that columns can be selected
by clicking on column headings. To do this, you have to use command-
option and the arrow keys to get to the headings, which is different
from what must be done to navigate to a particular cell. To do the
latter, use the arrow keys without pressing the control and option
keys. VoiceOver will speak the cell address and and what is in it
(i.e., whether a number, a date, etc.).

new beta, but from poking around, I have found that if you open
tables, you are automatically interacting with the first sheet.
You can add a sheet or import a multisheet document and move among
sheets by pressing vo-shift-up arrow twice to get into the window
that allows you to interact with the toolbar and other items. in
this window there is a popup for sheets, interact with it and
choose your sheet. I'd rather be able to do it more easily say
with a keystroke, but it works.
