Many of the menu options (i.e., in the file menu, edit menu, etc.)
have corresponding keyboard commands, just as in most other Mac
applications.

open tables, you are automatically interacting with the first
sheet. You can add a sheet or import a multisheet document and
move among sheets by pressing vo-shift-up arrow twice to get
into the window that allows you to interact with the toolbar
and other items. in this window there is a popup for sheets,
interact with it and choose your sheet. I'd rather be able to
do it more easily say with a keystroke, but it works.
