This is something the developer of those applications would need to fix. There are Application Programming Interfaces (APIs) which the developer is supposed to supply information to along with labels on buttons etc which VoiceOver depends on. If the developer doesn't follow Apple's guidelines on how to do this then VO can't announce what's happening.
