Hi Jacob, If you do get the Edirol UA25, let me know and I can at least send you an Email that I got from support letting me know what the back panel does and the arrangement of switches. If you just leave defaults, then it just acts like a normal USB sound card supporting 16 bit 44100HZ etc. I have heard that the creative USB cards do work on the Mac even though there are no drivers for them. The Creative USB sound card is just seen as a generic sound device. All you apparently have to do is just plug the Creative USB card in and away you go. It might be worth going to a shop, taking your macbook in and trying one of these creative USB cards in your mac to see if it works. As it needs no drivers, that shouldn't be hard to get happening.
