You cannot adjust the speed of a file in iTunes. The iPods have limited
speed control for audio book files, but this wasn't implemented in
iTunes itself only on the iPods.
As for volume control, you can if the application supports it. iTunes
does, use command+up and command+down to raise and lower its volume
respectively. I haven't encountered an audio player yet that doesn't
support this in OS X and the command+up and command+down shortcut is
fairly standard for controlling it.
