Go into Tools > Selection > Font > Language (you may have to download
additional dictionaries, but they are available). Once you have added
Spanish, it will always show up in your list. (I work with English,
French, German and Hungarian).

you can select the language to use for a particular selection with
the handy menu available at "Tools => Language => For Selection".
Problem is: this menu seems to only ever show 2 languages to choose
from, as far as I can tell (in my case, French and English), which makes
it inconvenient to choose Spanish when I need it.
So: how do I control which languages get listed in there by default?
