The Audiophile is a fine card. I've got the delta66, which uses more or less
the same engine. I chose the delta66 above the audiophile because it has a
breakout box and I do a lot of recording of external equipment. 

For the moment I'd stick to W2k... I don't know about stability issues with
XP yet, but I always like to wait a while after a new OS is released so most
bugs are (hopefully) found and fixed. I don't like to play beta-tester for
ms.

About the midi controller/keyboard. Well, it's just that a midi keyboard is
the ideal input device for music. Once you get used to it it's soooo much
easier to just play notes on a keyboard than to have to draw them using your
mouse. I 'input' 95% of the notes/beats using a keyboard.
In the last year or so some companies (like m-audio I believe) started
making controller keyboard with some knobs and stuff on... I don't know how
much they cost, but I used to suggest to people to just get a 2nd hand synth
with midi (like a cs1x or something, which has knobs too), or one from
evolution audio, which really don't cost that much. Or you can buy an old
Roland W30 that's just gathering dust at my place ;)
Don't go overboard on this, you don't need weighted keys and stuff...
