In addition to the other good advice, do you have a specific area of IT in mind? Programming, networks, hardware maintenance, web front-end stuff, UIX, ... Approaches might be taken more seriously if you could express a preference even if you acknowledge a perfect fit is unlikely. Also, have each application show you've looked into that company and not sent the same email to a hundred addresses.
