I run 7.6.1 on all my 040 Macs  --- 7.5.x is just too buggy for my tastes,
and 8 seems too slow.  Like Mad Dog, I use the Appearance extension for
more-consistent-looking interface (I have other machines running 8 and 9).
I also managed to get Open Transport 1.3 (from System 8.1) running well
with 7.6.1 --- I wanted the latest version I could run to avoid the
problems with earlier versions.  I have a handful of other System 8/8.1
extensions and control panels running (Date and Time, Applescript, Apple
Built-In Ethernet, File Sharing extensions, Apple Menu Options).  I wanted
the latest bug fixes in some cases (Ethernet), in others I was just being
perverse (Date and Time).   I've had no trouble and excellent stability in
this configuration for quite some time now, once I sorted out which
versions worked together and which didn't.
