Sounds like a sweet setup. :-) I always liked the Duo machines, too bad
Apple dropped them; I think they were on to something.

OS 8.1 comes with updated networking and application support; for example,
OS 8.1 can connect with an OS X 10.1 server out of the box, but 7.5.5
requires an updated AppleShare extension. Most programs that "require" OS
8.1 can be made to work under 7.5.5 by updating portions of 7.5.5, but some
things still work better in 8.1 (VNC for example, although it's dog-slow on
ANY 68k machine).

7.5.5 is more RAM friendly and generally peppier, but at the same time is
older. I prefered 7.5.5 on my Q950, installed Kaleideoscope to give my
machine the 8.1 look and feel. BTW, I'm using a PPC upgrade card in the 950
now, and it's obvious how much more PPC native code there is in 8.1. Big,
big speed improvement.

In short, as long as you're not using something that requires 8.1 (Pretty
unlikely on a Duo, and some hardware pieces would work better under 7.5.5),
downgrading to 7.5.5 would make a more efficient machine.
