It already does work that way. It asks for your real birthdate on journal creation, which is what I enter for my RPG journals, and then I immediately change it to the character's birthdate. And then there's an option to control how much is shown - all, nothing, hide year.
Ideally it would keep the original date for any legal-age restrictions, but use the changed date for display.
