Softshare's Delta Enterprise is an any-to-any mapper.

It not only does what you've already mentioned in your post, (Flat,
positional, CSV, EDI , EDIfact, XML etc) but also Database to any (or vise
versa) via ODBC or OLE. 
I've needed this on numerous occasions where my sites host application was
not able (or willing) to produce a 'flat' file and needed to access their
host's database. (Oracle db for example). It has a SAP IDOC parser built in
too for those who need access to SAP. Delta also lets you translate from any
to HTML text suitable for emailing or posting to a web-site as well.

So in reality Delta is a true any-to-any mapper - most others are simply
theoretical! ;)

Many EDI/XML translators in today's market offer the feature to map 
from 'any' format to 'any' other format. Popular mappings include:

1. Flat file (fixed length, positional, CSV) <--> EDI (EDIFACT, X12, 
UCS etc.,)
2. XML <--> EDI
3. XML <-->XML

-
etc.,

While in theory there are countless permutations, I would like to 
understand what formats are really usefull/meaningfull in real 
business situations. In particular, the XML <--> XML mapping - what 
kinds of XML formats are mapped from/to in real world scenario ?

Please share your experiences in this regard to throw light on this 
subject.
