Softshare's Delta Enterprise is an any-to-any mapper. It not only does what you've already mentioned in your post, (Flat, positional, CSV, EDI , EDIfact, XML etc) but also Database to any (or vise versa) via ODBC or OLE. I've needed this on numerous occasions where my sites host application was not able (or willing) to produce a 'flat' file and needed to access their host's database. (Oracle db for example). It has a SAP IDOC parser built in too for those who need access to SAP. Delta also lets you translate from any to HTML text suitable for emailing or posting to a web-site as well.
