I can attest that you can get by nicely for DXing with 2 receivers, 2.7 and 0.4 8-pole in main, 2.7 only in sub-rx. Of course it's nice to have more, but honestly I've never felt that I had to have 'em. Whatever you get, you're 100% right that the K3 is the dream DXpedition rig.
