I have quite successfully used sections of HDMI cables for multi shielded cables in many applications. There are four shielded twisted pairs one HDMI cable plus a number of signal lines. among other things I used one when I adapted my David Clark aviation headset for my rig. I used one shielded line for the mic and the other for the ear phones and one of the other lines to provide bias for the mic. works great. For analog use I would think that most HDMI cables are fine but if you want good grade some high end brands like monster cable can be pretty good quality cable.
Another source is VGA cable with if memory server 3 shielded lines for RGB. these are unbalanced (singe ended) Last is USB there are four conductors two are twisted pair typically green and white they are all shielded in one jacket.
