Here on the Elecraft reflector the text is transmitted as plain ASCII, meaning that all of the formatting (font size, etc.) is stripped. That won't fix "all caps" since capitals and lower case are all individual ASCII coded characters and go through the system as such. But, if you increase the font size at your end to read it more easily it won't show up any differently at the reader's end.
As others noted, all caps in e-mails is "shouting", Hi! When I want to emphasize a word politely, I use asterisks like *this*.
