Do you mean the Preview, (La)TeX, Command, and Ref menus? It's a  
matter of a few things:

  • having installed a recent version of AUCTeX
  • having load-path pointing to this place
  • having (load "auctex.el" nil t t) and (load "preview-latex.el"  
nil t t) in some init file
  • having a TeX or LaTeX or ConTeXt file loaded

This is very unlikely. This mode is "built-in." (File) Local  
variables can override the "natural" setting.

You could re-use your Linux one. The variables system-type (linux vs.  
darwin) or system-name or window-system (x vs. ns or mac for Carbon  
Emacsen) can be used to make certain settings unaccessible on the  
other platform.
