Do you mean the Preview, (La)TeX, Command, and Ref menus? It's a matter of a few things: • having installed a recent version of AUCTeX • having load-path pointing to this place • having (load "auctex.el" nil t t) and (load "preview-latex.el" nil t t) in some init file • having a TeX or LaTeX or ConTeXt file loaded > (Emacs.app seems also unable to find anymore the latex-mode…) This is very unlikely. This mode is "built-in."
