I don't know how I did it, but now I 'm again able to see the options on 
AUCTeX. (I don't mean the menus; I mean the options through M-x 
customize-group RET AUCTeX.) Anyway, I made the settings for the various 
XeTeX commands as you described, added the local variables list, but 
Emacs can't find xelatex: "/bin/sh: xelatex: command not found". I 
suppose there is some variable to set the command search path?

     2) You were right about the latex-mode, that it was unlikely not to 
be found. I was trying to do  M-x customize-mode RET LaTeX-mode  , just 
after Emacs.app opened, and I couldn't. But if I first load a LaTeX 
file, I 'm able to customize the mode as I expected.
