-- Marc: As Chris has suggested, you may need to do some 'work' in the Classic Internet control panel. Internet (CP) > Web > Default Web Browser (at bottom of CP). In addition to Chris' suggestion, you may also have to go to Safari > Pereferences > General and select Safari as your default browser. As for image files, I think you should still be able to use 'Open with:' and 'Change All..." in the Get Info dialogs of OS X. All my image attachments from CE open in Preview, so I must have done something of the kind along the way. Same with .txt... all should open in TextEdit, but may need some tweaking in Get Info to make work.
