Aside from whether or not a specific product type or standard requires
an emergency stop button, Nick Williams is right in that EN 60204-1 is a
good reference for e-stops in general. Likewise, NFPA 79, which is very
nearly identical to EN 60204-1 is another reference. These standards
don't provide the level of detail you'll need in any particular
implementation (in fact, they are intentionally overly broad), but some
guidelines are good to have.
I'm not familiar enough with EN 61010 to provide advice for that
standard, but for e-stops in general, there are some considerations
worth keeping in mind. For the following, specific requirements in
applicable standards supersede these comments.
1) an e-stop does not always have to interrupt mains to complete
equipment, and doing so may even be undesirable, if certain processes
require time to halt operation in a safe manner (meaning, stopping
everything at one go causes an unsafe condition to exist); the term
'orderly shutdown' is often used
2) under some circumstances, an e-stop can halt operation of one
section of an equipment line-up, if that's the only equipment section
where an emergency presents itself;
3) if case 2 applies, other safety measures may be needed and
care should be taken that adjacent equipment senses e-stop activation
and don't separately cause an unsafe condition to exist in the halted
section
4) an e-stop can sometimes be integrated into an interlock
system; this is useful if case 2 applies
5) some standards also require e-stops also disconnect any
standby power from batteries or UPSs
I'm sure there are other considerations, but these are of the top of my
head.
