While you may not be required to meet 100% of requirements for CE mark for demo samples it’s still logical to have done a risk assessment and address any potential risks that might be applicable to demo samples under whatever supervision is applicable. For example immunity or RoHS requirements may not pose any risk to someone evaluating a demo sample but shock hazard certainly would.
