I started looking at the NXP LPC2368 series, but these have not 
been available for a while.  Now I am looking at the Atmel 
AT91SAM7X256.  It is in a 100-pin LQFP package, which is going 
to be easy to mount.  I want to avoid BGAs.  The NXP chips 
started at about $7, the Atmel is a little more expensive, 
around $10.  Either one is still a GREAT deal for what you get!
The NXP chip is supposed to run at 72 MHz, but there were 
problems when it ran that fast.  I think the Atmel is a little 
slower, but still probably a lot faster than an 8-bit CPU at 
even 100 MHz.
