You can have whatever you want! There have been a few attempts to
make a smaller distribution but none have caught on.
EMC2 is Free software so you don't need anyone's permission to get
what you want. "Why can't I have" is a question you never need to
ask.
If you want a custom install, have at it - build a realtime kernel and
EMC2 from source, based on whatever install you like - there's nothing
about EMC2 that requires Ubuntu.

Thank you for your reply.
I suppose I feel a 'tad' guilty downloading it all and only using the EMC
part.
Lots of people have put in a tremendous effort made all sorts of sacrifices
to make this download available, I have an immense appreciation to all those
who have given up their time to do so.
I like the Linux/EMC concept (openly working together) and I support it
whole heartedly, even though my contribution is nil. (Mainly because I am
just not good enough to contribute). One day hopefully I will.
