I think my previously-linked Arduino setup would do that (but without
any extra hardware). A standard one has 6 analogue inputs which is
enough for three axes.

Modifying the code to not run the function generator might give a
faster update rate, and there is probably no need to keep the
acquisitions synchronous with the excitation (I am assuming that these
scales don't need an excitation signal?) But it should just work as-is
with no modifications.
