I think my previously-linked Arduino setup would do that (but without any extra hardware). A standard one has 6 analogue inputs which is enough for three axes. Modifying the code to not run the function generator might give a faster update rate, and there is probably no need to keep the acquisitions synchronous with the excitation (I am assuming that these scales don't need an excitation signal?)
