You can encrypt HTML mails when using PGP/MIME standard. You just have
to make sure that your recipient can open it. Some prominent MUAs are
known to not be able to cope with PGP/MIME. Enigmail allows to set the
use of PGP/MIME individually for each of your recipient. This requires
some time to set up.

This is for display only, there has been no change to your saved emails.

Well, that's normal. Plaintext mails just cannot have inline images.

Goto the Config-editor, search for

        mailnews.display.prefer_plaintext

and set this to the default value false

If you want to send HTML mails, please also set

        mail.default_html_action

to the default value 2

You may find other useful settings there, but, keep in mind: "This will
void your warranty"

Maybe these settings can be made through "normal" GUI, perhaps somebody
can step in.
