Regarding the signature and the cursor, this question was asked (by me :)
last week.  Below is the response I received.  The many features in
Entourage are nice indeed!

Under Preferences, Mail and News, select Replies and Forward.  Under Mail
Attribution, select the last option, Prefix my replies with short headers.
That should do it.  Also, make sure you have a default signature set up for
that account.
