I <think> this got changed on purpose, to make Entourage similar to other
Office apps. Cmd-arrow always did a one-word move in Word, at least in Word
98. It was confusing to have my two most-used apps (OE and Word) with
different behavior. I'm glad they are now the same.
To move to end or beginning of lines, use the End or Home keys. (Cmd-End is
end of document; Cmd-Home to top of document.)
If you want to customize your keyboard shortcuts universally, get something
like OneClick or QuicKeys.
