I actually thought of that just after I wrote. But if you're using your left
hand on the mouse, can't you use your right hand for command-S, even though
it's on the left side of the keyboard? I use my left hand to do command-L,
which is the same thing for right-handed people as command-S is for
left-handed, all the time in an application I use almost as much as
Entourage (Smile script editor). Your F-key solution is even better,
although it needs setting up and remembering.
