The Carbonized versions of MS Office (I assume that includes Entourage) were
announced to be available around September.

As for the Carbon vs. Cocoa issue.  It depends on how hard it is for you to
carbonize your existing app.  Carbon is supposed to be the "quick and dirty"
(Apple says that only 5% to 20% of the code need be changed to go from
Classic to Carbon) way to get your app on OSX.  Cocoa is a more extensive
change.  I have read where some people were finding Carbon to not be that
quick and easy.  If it's not, you might as well go right to Cocoa.  Cocoa is
the environment that will be the most stable and give the best performance.

Cocoa is where you should go eventually (in every case), it's just if you
want to make a quick pit stop on Carbon so that people can use your app in
OSX instead of Classic.
