A couple little things.. Is your new Documents folder "blessed"? That is,
does the OS recognize it as THE documents folder for your machine? You can
tell this if the OS has assigned it a special icon.
If it isn't, you can either try to "bless" it (open and close it? not sure
how to do this), or you probably do have a "blessed" Documents folder
somewhere else. You can just drag the Microsoft User Data folder into it,
and try again.
I'd also erase the Entourage prefs file from the System Folder...
