I've come across (what I consider to be) a bug in Entourage's auto-correct
spell checking.

If I type a word that needs an apostrophe (like "that's" or "I'm") but
forget to insert the apostrophe, Entourage thankfully adds it for me -- I
like that. However, even though I have Entourage set up to use plain text
for all messages, it enters a "curly-quote" apostrophe rather than a plain
text apostrophe. Many email systems still don't handle high-ASCII characters
like curly-quotes properly, which is one reason I use plain text for
everything (plus I'm an email purist, but that's another story ;)). It seems
to me that if you have selected "plain text" for outgoing messages,
Entourage should always use plain text quotes and apostrophes.
