Do you know which version of Exchange you are connecting to? Exchange 5.5 didn't actually send out an iCal mime part with events by default (although I think there was an option to forward as iCal). Entourage 2001 had some code to try and parse the event information out of the body of the message, but it didn't work very well and was removed in Entourage X.
