Today, coincidentally, I did some snooping, and what was going on was that the imapd was initializing the connection, and one thing it does is purge old messages out of the trash. If your trash grows large (as this one had), it can take some time. Unfortunately, entourage doesn't give you an idea what's going on (other than "opening connection"), because the server doesn't.
