If you just make it your practice to open Word, Excel and Entourage when you start the day or boot into OS 9, then double-clicking an attachment or document will use the open Classic version of the app and won't try to open the OS X version. The OS may "learn" those versions at some point, and you may have to do the same thing in OS X not to have the Classic version versions open instead. (At least they open there, but may make you wait for Classic Environment to open.)
