Not sure if you are asking why Entourage puts the user data in the Docs folder instead of the app's folder, but if you are, read on. Someone gave you a great technical answer. My response is more basic. Backing up app folders is rather unrealistic, wasteful, and time consuming. Lose the app folder and you'd love your data! When I wrote Mac Efficiency 101 at MacCentral, and teach Mac 101 at Macworld's Mac Beginnings, etc, I point this out. All of your user data belongs in a folder you'll back up. In Mac Efficiency 101 I did not go into putting it all in the Docs folder, but you should. The MS Mac OE/Entourage team was perhaps the first to respect the need for us to back up our user data by doing this. (Thank you.) For other apps you have to (or had to, prior to X?) move and maybe alias your data.
