I use Entourage X with Exchange regularly without any of the problems that
you have described.

Do you know what version of Exchange is in the backend?
Do you have LiveSync enabled in this IMAP account options in Entourage?
Are you using the default delete model? ("Move messages to the 'Deleted
Items' folder"?)

One thing that I've done is to make sure Full messages are downloaded in the
schedules. To do this, edit your schedule. On the line with your IMAp
account, there will be a "Click here for account options".

In the ensuing "Folder Synchronization" dialog, you might want to make sure
all the folders are checked. I also have all my folders set to synchronize
"All Messages".
