No, it doesn't set junk category. But, just possibly (although I doubt it),
the Quick Filter finds messages with Junk status as well as Junk category (I
think it's more likely that there's a bug.)

YES. Advanced Find (option-command F).

    Items  Types : � Messages

    either : This Folder (pick your folder) or All Folders

   Criteria:    

                                match where ALL criteria are met

    <Status<    <  Is Junk>
    <Category>  <Is>    <Junk>

Always use Advanced Find (or make a Custom View, which is the same thing,
preserving the criteria) in preference to the Quick Filter. It's much
better.
