There's a script in Export-Import Entourage which will fix this (I think Barry may have one too). It also fixes received messages so that you can reply from the same email address as received it - if you have that as an account in Entourage, of course. (You'll notice that all the messages will otherwise reply from your default account, although you can switch them manually, of course.
